Vegetarian Tomato Penne
w/ Capers and Fresh Parsley

12 oz Penne Pasta
2 Large Tomatoes Fine Diced
2 Tablespoons Butter
1/2 Cup (4oz) Brie or white meltable Queso
Fine Chopped Fresh Parsley.
Always remember to wash all of your fresh produce before cooking with it. Dirt in a dish never tastes too good!
Start by adding your 12 oz uncooked pasta to 6cu. water at a boil.
Adding water if needed.
The pasta will need to cook till al dente. If you overcook it it will fall apart.
Once the pasta is cooked al dente ( almost soft) soft remove from heat and strain the water from the pasta.
Place the cooked pasta back into the pan add your fine chopped 2 Large Tomatoes butter and cheese.
Mix well over low heat until hot.
Ready to serve.
Top with capers and fresh cut parsley.
