Asiago Stuffed Turkey Cradled in a Quick Dressing and topped with my Roasted Jalepeno Chilled Cream sauce 

Thanksgiving is a time for family and friends but sometimes I am alone so this is what I did…

Serves 3 

Ingredients :

1 pk uncooked turkey steaks (3pk)

1/2 cu white dry wine 

1/2 cu Italian flat parsley chopped

1 tomato diced

1 piece of celery diced

1 large green onion

Asiago cheese

1 cup melba crackers crushed

1/2 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon pepper

Jalapeño cream sauce:

1 yogurt unsweetened plain

2 jalapeños 

Directions:

Preheat oven to 375°

In mixing bowl place your tomato diced, 1 piece celery diced, 1 large green onion diced. Mix well and add diced parsley.

In small baking pan place your steak and stuff with your Asiago cheese and top with the veggie medley and roll.

Do with all three the same way.

Add wine to the pan.

At about 20 minutes add 1 1/2 cu water to dish. 

Cook times vary a bit depending on altitude, ovens, turkey weight, etc. So keep an eye on it.

It took mine about 45 minutes.

In your pan dump your crushed melba crackers over the broth and juices spreading them out to cover pan.

Season with your salt, pepper, and paprika. 

Bake 15 minutes at 375°.

Roasted Jalapeño Cream Sauce:

In oven roast 2 jalapeños 

Once soft and a little dark in areas remove and place in blender with yogurt. 

Liquify 

Can be used as dip with tortilla chips.

Use chilled.

Tumeric Chicken Corn Chowder

Serves 12

I like to make this recipe and add my tumeric and paprika to each dish according to personal taste. This way the kids get to enjoy it too even if they don’t know how to eat the tumeric…

Ingedients:

1 lb of chicken

12 tortillas

1 medium onion

Butter 2 tbs.

3 1/2 cups of cooked corn

1  (8 oz) package fat free cream chesee

1 cup soy milk unsweetened 

1/2 cup cilantro

2 jalapeños 

Tumeric, paprika,  shredded cheese , and tortilla strips (chips ).

Directions :

In medium sauce pan sear your chicken till cooked thoroughly then remove and dice.

Add your 2 tbs butter to the bottom of your large soup pot 5 quart.

Dice onion and jalapeños  and add to butter over medium to medium high heat.

Sweat your onions till a translucency forms and them add your chicken.

Dice your corn tortilla into 1/2 in cubes and add to pot.

Add the unsweetened soy milk and fill with water until about 3/4 full or until all the food is covered.

Add a 1/4 cu or to preferred taste of time rich and 1/8  cu paprika  (you can also season each bowl, my personal preference ).

Add your corn. 

Add your cream cheese and cook On medium about 30 minutes. 

Add your fine diced cilantro. 

Garnish with shredded cheese and torrilla strips.

7 Minute Sautes, Sweet and Savory Sausage and Cabbage Stir Fry

Serves 4 to 6

Ingredients :

3 sausage links 6 “precooked  (beef)

1/2 head green cabbage

8 sun dried tomatoes in olive oil

2/3 cup rains

2 0z soy sauce

Olives and red peppers

Directions:

Heat your medium sauce pan to med high and add your sundries tomatoes and 2 Oz of olive oil from tomatoes. 

Cut cabbage 4 x down the back of cabbage.

Then thinly slice again to create perfect mouth sized cabbage.

Quickly add to pan.

Thinly slice your sausage ( beef) and add to pan.

At last throw your 2/3 cu raisins and soy sauce and stir.

Saute for 5 to 7 minutes until the cabbage has a glossy appearance  and sausage is heated.

Garnish with olives and red peppers.

And enjoy!

My Crazy Corn Chip Pie 

My crazy corn chip pie like all my dishes I try to use as many organic all natural ingredients that I can find available to me. For this I have found very few corn chips in my area gmo free, central market brand gave an option and Amy’s Organic chili (I am not endorsed ).

Check it out super easy super fun with the family. We like to set up a topping station and let everyone pic their toppings…

This is mine. ..

Ingedients:

Chili

Corn chips 

Shredded cheese (mozzarella )

Diced tomato

Diced onion

California hot mix 

Directions:

Heat your chili thoroughly and layer on top of your chips in the bowl and top.

I top traditionally with cheese and jalapeños but used California hot mix this time. I added tomatoes and onions as well.

I had a lot of fun eating this and hope that this dish inspires others to have fun with food too.

Enjoy 

2 Egg 3 Cheese Quesadilla

Ingredients :

2 eggs

2 tortillas

1 slice onion chopped

1 slice tomato chopped

Olive oil

Mozzarella cheese

Pepper jack cheese 

Swiss cheese

2 saute pans

Directions:

Heat your pan to about medium low and drizzle a few tablespoons of olive oil in pan and add your onions and tomatoes. Simmer a few minutes and cracked your 2 eggs into the pan.

Heat your second pan up and place your tortillas in pan.

Once your eggs are cooked to liked doneness dish on top of one of your tortillas in the bottom of pan on top of your mozzarella. 

Add the rest of your cheese to the top.

Place the 2nd tortilla on top and gently flip. Cook for a few minutes until warm throughout. Cut in half and serve.

Serve with your favorite salsa and sour cream! Enjoy!

Black Current Florentine Mac N Cheese

Ingredients :

9 oz elbow pasta

1 package 9 oz spinach raw

1 medium carrot

1/4 cu balsamic

1/4 cu pear juice

1/5 cu black current seed

1/2 cu pimento cheese spread

2 tbs butter non salted

Olive oil

And sliced sausage cooked

and 1 saute pan , 1 pasta pot

Directions:

Start your water boiling to cook your 9 Oz of pasta.

Prepare your carrot using a potato peeler to get those even thinly sliced carrot shavings and spinach and place in your saute pan on about medium heat with a drizzle of olive oil on bottom of pan.

Add your balsamic vinegar, pear juice and black current to pan cooking until the spinach is wilted.

When your pasta is ready drain any extra water out. Add your pimento cheese and butter incorporate together well.

The meat in this dish is totally optional.

Place your mac at the bottom of the bowl topping with sliced cooked sausage if desired and your black current spinach carrot balsamic veggies.

I love food and Mac and cheese is so much fun to dress up with different things. I am always inventing and trying to do things new and diffrent. Stay hungry my friend.

Ground Beefy Texas Casserole 

Serves 8

Ingredients :

1.5 lbs cooked ground beef

15 Oz stewed tomatoes

14 Oz cooked corn

12 corn tortillas cut into 1 in squared

1/2 cup salsa

1/2 cup water

1/2 cup soy milk (or dairy milk)

1/4 cup diced cilantto

1/2 cup cheese melt able processed alternative

Directions:

Combine all ingredients in large baking dish and top with cheese.

Bake at 350 degrees for 25 min and serve.

Easy dish to make with your taco leftovers.

If you use can goods instead of fresh you can leave the juices in the dish.

Vegetable Soup

Serves 12

Ingredients :

1 zucchini mini diced

1 squash mini diced

4 tomatoes med cubed

4 carrots diced

1/2 head shredded cabbage

1 red bell pepper

1 green bell pepper

3 cups cooked kidney beans 24 oz

1 Oz olive oil

1/4 cu red wine

1 Oz grapeseed oil

1 Oz soy sauce

2 tbs butter unsalted

A few avacados and or mozzarella cheese shredded. 

1 med saute pan 

1 medium soup pot

Directions:

Heat your medium saute pan up to medium heat add butter and saute carrots till tender then add to pot.

Do the same with the  olive oil and diced green bell, red wine and red bell, grapeseed oil with soy sauce and cabbage. 

Then add your uncooked fine diced zucchini,  squash, kidney beans, and tomatoes to soup pot.

Add water till all veggies are covered in liquud. You will need to cook on medium heat for about 30 minutes till hot.

And serve with your chopped avacado on top and mozzarella cheese.

Enjoy! This recipe is super low in fat sodium and packed with antioxidants!

Ground Beef Tacos

Makes 30 Tacos

Ingredients :

3lbs ground beef

2 Oz tomato paste

4 medium carrots 

1/2 onion

1/2 cu salsa

Fresh white queso cheese

Soft flour tortillas

Directions :

Heat large sauce pan to medium high heat.

Put ground beef in heating pan.

Shave and dice the carrots and onion and put in pan with beef.

Add your salsa, tomato paste and cook thoroughly stirring often.

Cook beef to 185 degree for 5 min until all pink is gone from meat.

Warm your tortilla on the grill.

Dice cilantro…

On your warm tortilla fill with meat top with Mexican fresh cheese and diced cilantro and enjoy!
