Don’t Mock Just Rock the Guac… Tejas

 

This is a story of my rocking Guacamole who started at the bottom now we there!

Avacados aren’t always perfect and in this recipe I heal these beaten avacados into  beautiful life through this guacamole salad.

This does make a party size but if you love dips and avacado like we do you will eat it up fast.

I can usually finish this size in 2 days.

Ingredients:

  1. 6 avacados ( soft but still firm, ripe)
  2. 2 medium tomatoes diced
  3. 1 large onion diced
  4. up to 1 jalapeno diced
  5. minced cilantro for garnish
  6. 2 tbs butter unsalted
  7. 2 tsp salt and pepper
  8. 2 limes

Directions

In sauce pan heat to medium high butter and onions.

Cook till lightly caramelized.

They should look like this.

In a large bowl slice avacados in half going around the seed and spooning into the bowl.

These aren’t completely ruined and can be rejuvinated by our fresh squeezed lime juice.

It’s ok we are going to fix this problem.

A little bit about me and my belief that in cooking photoshop should not be allowed. If I am unable to make a pastry or a dish come out the way it should then I won’t lie and act like I can. If I can’t make the food look and taste as good as a restaurant then I shouldn’t be trying to tell other people how to make the dish.

18 years in the food and beverage industry in and around HTX taught me that.

Don’t act like you know what you are doing if you don’t someone will call you out!

Back to cooking…

Cut your limes in half and squeeze all the yummy lime juice all over those avacados . As you may have noticed I did not take the time to deseed the avacados just toss those in as well they add character.

JUST DON’T EAT THEM.

Add all your diced goodies to your bowl.

Mixing well and topping with minced cilantro.

And serve and enjoy!!
