This recipe is fairly simple saute style breakfast food. The recipe is a for one but can always be increased.
- Talapia 1
- 2 eggs
- 1/4 cu tortilla chips
- minced cilantro 2 tbs
- minced parsley 1 tbs
- 1/2 diced jalepeno
- 2 tbs olive oil
- 2 tbs plain unsweetened yogurt
In a medium sauce pan heat your olive oil to medium heat and add your single talapia.
Add your diced jalepeno to your pan to cook while the fish is cooking.
Cook till the white fish flakes.
(Pulling apart easily , cooked through out)
Break your 2 eggs in the pan
and add your tortilla chips.
Add your cilantro, parsley and yogurt.
Cook thoroughly till desired hardness of your eggs is achieved.
