Crunchy Banana Cinnamon Breakfast Bread

Throughout the year before anything goes rotten in the fridge or pantry I freeze it. This has become essential to being able to feed my family throughout the year and save money on fruits and veggies when they are in season.

This bread is super easy if you have a mixer.


3 to 4 banana ripe and can be frozen thawed

3 tbls cinnamon 

1/3 cu coconut oil

1 tbls baking powder

1 tbls baking soda

1 tsp salt

2 tsp soy milk

1 3/4 cu organic flour

3/4 cu sugar

2 eggs

1/3 cup dried banana chips


Add all ingredients into mixer except dried banana chips. 


Pour into greased bread loaf pan. 

Top with dried banana chips and bake at 350° for 35 to 45 min.

Carne di Maiale Fettuccine Tomato Fresca 

This picture above is my breakfast variation that I top the dish with a fried egg.

This dish feeds 10 to 12 as the way I made it but as always the ratios can be reduced or increased to make more or less.

This tossed pasta dish is simple and easy.


16 Oz fettuccine uncooked pasta

2 zucchinis 

1 pkg mild breakfast sausage

1 leek

5 tomatoes 3/4 in cut

Olive oil 

Cilantro to garnish 

Fried egg to top optional 


In medium sauce pan cook your pork until all the pink is diminished. 

Heat water to boil on high and in large pot when the water is boiling add pasta and cook till tender. 

In medium pan use a tbls of olive oil and heat pan.

Thinly slice the zucchinis and cook on med high. About 2 min in add a splash of water and cover to quickly cook the zucchinis. 

Add salt and pepper to the zucchini. 

Once all three are cooked add together to a large tossing bowl and add your leek raw and sliced.

Top with fresh chopped tomatoes. 


Fry and top with egg and or cilantro to kick it up a notch. 

7 Minute Saute: Breakfast Scrambled Eggs with Onion and Tomato

Super fast 2 egg scramble …


2 eggs

1/2 diced tomato

2 slices of medium onion chopped.

2 tortillas

1 tsp olive oil

Smoked jalapeño yogurt for dipping


In saute pan add 1 tsp olive oil heat to medium to medium high.

Add your diced onion and tomato.

Saute about 2 minutes till onion has a glossy look then cracking your eggs on top and stir well.

Fill your warm tortilla’s and serve with smoked jalapeño yogurt. 

2 Egg 3 Cheese Quesadilla

Ingredients :

2 eggs

2 tortillas

1 slice onion chopped

1 slice tomato chopped

Olive oil

Mozzarella cheese

Pepper jack cheese 

Swiss cheese

2 saute pans


Heat your pan to about medium low and drizzle a few tablespoons of olive oil in pan and add your onions and tomatoes. Simmer a few minutes and cracked your 2 eggs into the pan.

Heat your second pan up and place your tortillas in pan.

Once your eggs are cooked to liked doneness dish on top of one of your tortillas in the bottom of pan on top of your mozzarella. 

Add the rest of your cheese to the top.

Place the 2nd tortilla on top and gently flip. Cook for a few minutes until warm throughout. Cut in half and serve.

Serve with your favorite salsa and sour cream! Enjoy!
